Turkey thigh pot pies and why David Bowie is the Mozart of our time.

Jarom gave me the news last night about Ziggy Stardust/goblin king/style icon, disbelief,shock, as impossible to me as a pink unicorn walking over Cathedral bridge, he always seemed not human, immortal.From what I have read, he made the last album fully aware of the fact he had cancer and the end was near, like Mozart wrote “Requiem”, his final album is his last gift to humanity, it captures the heavy emotions that come with crossing over to the non-physical realm…with style I might add… what a legacy!
From Warhol to Iggy Pop, David Bowie was not only a brilliant musician but a style and art world icon. Crossing through the obscure to the mainstream and never losing his individuality, never selling out,is just one of the many reasons to celebrate him. David Bowie is his own genre….and will continue to be immortal through his gifts that he so freely shared with the masses, I think giving your art to world is the way to live forever…even if your art only effects a few people….its worth it.
David was British, so in homage to him, I am making meat pies, the quintessential bar food of Britain.

You will need:
One sheet of puff pastry, thawed.
2 turkey thighs, roasted. (season to taste, roast for 30 minutes at 400 degrees then turn down to 300 for 30 minutes, cool and shred, place with reserved pan juice)
3 Tbsp. Butter
2 Tbsp. flour
1 cup sliced crimini mushrooms
1/2 medium onion, diced.
1/2 Tbsp. soy sauce
2 cup stock
1 spring marjoram
a palmful dried porcini mushrooms, re-hydrated in 1/2 cup hot water.
Pre-heat oven to 400 degrees. In a skillet over medium high heat, melt butter, add mushrooms, cook till golden, add onions and marjoram turn to low cook for 15 minutes.

Add flour to pan with mushroom mixture,over medium cook the flour with the mushrooms, until it smells toasty, add stock, soy, season with salt and pepper. Add turkey and dried mushrooms with water. When thickened and bubbly, divide into four, ten ounce ramekins.
turkeythigh cut puff pastry into four. Whisk an egg with a bit of milk or water, and paint the edge of each ramekin. Place puff pastry over top, and brush with egg mixture, add black sesame lighting bolt….totally option. Bake for 15-20 minutes or until golden.
