I really do think canned pasta is a travesty! That and frozen pot pies are some childhood not-favs….I seriously dry heave just thinking about spaghetti o’s! So I thought it would be fun to make a version of many kids favorite, making it adult appropriate as well. The name of the pasta shape in spaghetti o’s is Anellini, there are different sizes mine were the small, you can also use tubetti or another pasta shape. This can be made quickly on weeknight and could be a fun dish to serve at a dinner party for some childhood nostalgia. I made chicken meatballs to go with it, but you can use sausage or nothing at all.
You will need:
cups Anellini pasta
1 cup marinara, use homemade or your favorite store brand, I always avoid those that contain sugar.
1 tbsp butter
Salt, pepper, parmesan to taste.
1/2 ground chicken
1/4 cup panko breadcrumbs
1/4 cup grated parmesan
1 tbsp soy sauce
2 tbsp chopped flat leaf parsley
1 tsp dried oregano
pinch of salt and pepper
In a bowl combine all ingredients except chicken, mix together, add chicken and combine by hand. I used a teaspoon and made small “bite-sized” meatballs. Place on a greased cookie sheet, and broil for 5 minutes or until lightly browned. Set aside.
Prepare pasta as directed, add butter to drained pasta, add sauce. Place pasta in a bowl and add meatballs, and dress with parmesan and pepper, maybe a drizzle of olive oil!
