I talked about making soup with the pan juice from my Mom’s Greek Roasted chicken recipe and today I actually did! I saved the pan drippings and placed them in the fridge, then I scooped the layer of fat that separates off the top and used the jellied consomme as my stock! It makes thee best soup stock ever, and I paired it up with some dried tortellini and some meatballs I made out of ground turkey breast…I know its possibly not soup season, but I love soup lately I can eat it in one form or another for every meal! This version is delicious, and you can use whatever stock you have, even beef or veggie, this is just an example of a recipe being a “Two for one” make the Greek chicken get the soup stock for free! What a bargain!
You will need:
1 lb ground turkey breast
1/4 grated parmesan
1/4 cup panko breadcrumbs
1 tsp dried oregano
pinch red pepper flakes
1/2 tsp salt
1 tbsp fresh parsley
Combine all ingredients in a bowl, mix well, making sure to incorporate everything together. Pre-heat broiler and spray a cookie sheet with coconut oil spray (I love this stuff, I get it at trader joe’s) or whatever you have on hand, form meat into bite-sized portions. Mine were the size of those bouncy balls you used to get in the 25 cent machines on the way out of the supermarket as a kid (I did at least, then I would bounce and lose them promptly after spending my shiny quarter that I was paid to “breakdance” for customers at my parents restaurant…lol). Broil them for about five minutes and set aside.
8 cups good stock (if you are using the pan juice from the chicken, just add about 7 cups water to it and adjust salt to taste)
2 carrots, peeled, medium dice
2 ribs celery, medium dice
1/4 of an onion
8oz dried tortellini, or 8 oz pasta of choice, if its fresh add it last…I like dried in soup because it holds up better.
handful of baby kale or spinach I used kale because I had some on hand.
Place the stock in a medium pot, add veggies and bring to a boil, add tortellini (if using dry) turn heat to medium, add kale and simmer 15 minutes…holler “Soup’s on, in a Southern accent at your dining guest….the hollering is optional…but effective!
